Teacher Phongsri Waengwan, 64 years old, a former teacher at Mahasarakham Kindergarten School, has retired from government service. She used her knowledge of food, along with her love of making desserts, to make traditional Dok Jok desserts to sell as an additional income and to use her free time to benefit others.

Making the traditional Dok Jok dessert recipe by the teacher uses rice flour, tapioca flour, all-purpose flour, mixed with eggs, coconut milk, and sugar. Mix until smooth. Heat a pan, add oil. When the oil is hot, dip a dessert mold in the oil until hot, then dip it in the dessert batter. Return it to the oil to fry again until the dessert turns golden yellow and crispy. Take the dessert out and arrange it in pleats beautifully. When the oil is drained, put it in a bag. It
is freshly made every day. Each piece is 5 baht, while the bag costs 25-35 baht. It is sold at Maha Sarakham Night Market, restaurants, and beauty salons. It is called Khanom Baan Khun Ya, which gives an additional income of 500 baht per day. In addition, the teacher also accepts to be a lecturer, teaching those who are interested.
